Artichoke Bread

This week was my first week test driving freezer recipes. I figured with Brian traveling and a baby on the way, I should start stocking my freezer with some dinners. My plan is to make a few each month and try them freshly-made and out of the freezer while Brian is gallivanting around. First up, I started with a tasty side dish or lunch option -- artichoke bread. The recipe is from Once a Month Mom and it tasted great fresh (not sure what it will be like out of the freezer yet).

Ingredients

1 loaf french bread
1 can (14 oz.) artichoke hearts in water, drained
1 TBSP olive oil
1/2 cup Parmesan cheese
1 clove garlic, minced
1/4 tsp. pepper
1 cup shredded mozzarella cheese

Directions

1. Slice bread. Turn on broiler.

2. In a bowl, combine drained artichokes, garlic, olive oil, Parmesan cheese and pepper. Spread evenly over sliced bread. Sprinkle with shredded cheese.

3. Place under broiler for 5-7 minutes or until bread is toasty and cheese is melted and bubbly.

Freezer Directions


Prepare as directed above but DO NOT broil. Instead, place on a cookie sheet and flash freeze, then place in a freezer bag, label, and return to freezer. To serve: Place under broiler for 5-7 minutes or until bread is toasty and cheese is melted and bubbly.
